Nasi kari


Deserving a break and a solid meal of fried rice? Prepare nasi kari or curry fried rice. Typical of the Dutch nasi is that many meat leftovers are mixed in. Something like this I did too, but without meat...

The nasi kari is prepared from my home made curry that was prepared for the noodles, white rice and a residual of the dish prepaired the previous day: Orak arik. And what was the outcome? Amazingly tasty, I thought. Well, try it yourself.

Ingredients:

For the curry
0.5 tsp white pepper
1 teaspoon salt
3 tsp kunyit
1 teaspoon garlic powder
0.25 teaspoon cloves
1 tsp fenugreek
0.5 tsp cardamom
tsp coriander
For the fried rice:

300 g Orak arik prepaired the previous day
500 to 600 grams of cooked pandan flavoured rice
chopped onion
black pepper
50 g zucchini, peeled into strips
2 tbsp oil
1 teaspoon sugar
pinch Ve-Tsin
1 tbsp fish sauce (nuoc nam)

Preparation:
Mix the spice powders to a nice yellow curry. Fry chopped onion over low heat until it begins to color lightbrown. Turn to high heat. Stir fry Orak Arik for one minute, then stir fry the rice with it for two and a half minutes. Mix in a tablespoon of homemade curry mix. Fish sauce, sugar and pinch of Ve-Tsin following that. Continue to stir fry until the dish is heated through. Serve with kerupuk ikan (fish crackers) and pickles, extra egg, etc.
